Britt’s Vegan Chocolate gluten-free, sugar-free cake! (and a few other things)

If you read my last post, you will know that I had experimented with a very special needs kind of cake for my lovely BFF. She has (or rather, SHOULD have) very restricted eating habits! She’s not supposed to eat any wheat OR any sugar (even fruit sugar isn’t the best thing for her). She can, however, tolerate agave nectar pretty well.

Yesterday was her birthday. We had a little get together for her, which was a pot luck. We made some pesto with the BUSH of basil on her front porch, and made a quinoa-pasta pesto salad with creminis, sun-dried tomatoes and hearts of palm! Of course, it was amazing. Other people brought various things. Such as a delicious gazpacho risotto. YUM!

Using the successful recipe from my previous cupcakes, I made Britt a delicious wee cake. It was a VEGAN chocolate, gluten-free (a blend of many flours)Cake, sweetened ONLY with agave nectar.

cake sliceIt was a 5-layer 6″ cake, with chocolate almond butter frosting (which i changed the recipe a lot from the last time, to make it creamier), and a raspberry puree reduction inside. DAMN did it turn out delicious! I love chocolate, but not a TON of it, like Britt does. But I found myself really loving this creation. Mmmmm….

With the extra, I made pretty little cupcakes.

OK, so that’s the cake. I’m psyched to now have perfected a gluten-free cake that doesn’t leave a graininess in your mouth! It was Billie and I who made that happen, to give credit where credit is due.

ANYWAY…here are the other odds and ends.

I’ve mentioned before that Britt has a jewelry company, which she sells her stuff on an etsy store. The last time I posted about it, however, was when she just had a couple of items up. SO…I’m mentioning again that her stuff is ADORABLE, classy, pretty, hip…anything you’re looking for, there will be something for you!

Speaking of my favorite women ever. (This post is just turning into a plug for my friends…but alas…I love them.)…
My good friend and a professor I had in college, Sara, is also a baking fanatic. I found this out recently, and had a fun time helping her out (ahem…watching mostly!) with a fondant covered cake she made for someone in her department.

Ah yes, it’s rainy in central Texas today. Due to the hurricanes down near the gulf. We do need rain though. AND it’s a great excuse to lounge around in bed all day! (as though I needed an excuse)….
